Welcome to Prieto. Created by chef Alejandro Castillon Prieto, a master of the taco arts, and no stranger to the Minneapolis food scene.
Castillon, an immigrant from Sonora, Mexico, first started his chef’s journey back in at Solera. He quickly moved through the city working at Barrio and Bar La Grassa alongside chefs such as Daniel del Prado and Issac Becker. In 2011 he planted his own roots at the popular Midtown Global Market with his first hit Sonora Grill. Castillon’s Sonora creation expanded in 2013 to a full restaurant down the street in Longfellow.
Sonora Grill is the brainchild of Castillon that featured infusions of Mexican and Spanish cuisine with creations such as the Hermosillo Roll, an out of this world ceviche and his famous, vibrant orange shrimp caramelo taco.
2019 brings Castillon back down Lake street to the Lyn-Lake area; new location with familiar flavors. Prieto features firewood smoked tacos, traditional in style paired with Castillon’s natural flair for food-creativity. He stays close to his roots with these new scratch-kitchen creations hoping to bring a sense of an authentic Mexican cuisine to Lyndale Avenue. A full handcrafted cocktail bar, intimate seating and plenty of natural light create an atmosphere perfect for any and all taco aficionados.
